Vegan Gluten-Free Banana Bread

Its snowing here. Yes, it’s snowing in Texas. Which means sweatpants, coffee, and a little baking for this momma.

Below is a recipe for one of my favorite breads. And the best part? It’s actually good for you.

Quick tip:  you can make anything vegan that requires eggs by replacing them with this measurement

1 TBSP GROUND FLAX SEED & 3 TBSP = 1 egg

I use Pamela’s gluten-free baking and pancake mix. It’s amazing, user friendly and so yummy!

Here’s the recipe for this power packed bread!

VEGAN GLUTEN FREE BANANA BREAD

4 tbsp butter melted  (here vegans would use sun butter or any other “butter” substitute)

1/2 sugar or honey

2 eggs (2 tbsp flax and 6 tbsp water)

1 cup mashed banana

1-3/4 cups Pamela’s Mix

1/2 tsp salt

1/2 tsp vanilla

1/2 cup nuts (optional)

Preheat oven to 350°. Beat together all except Pamelas Mix, then add it last and finish mixing.

Pour into greased loaf pan.

Bake 1 hour.

Insert toothpick or knife to see if it comes out clean.
